All Mocama employees must take and pass the Level 1 Cicerone Certified Beer Server exam.
Anyone can call themselves an expert on beer. But when consumers want advice on which beer to order from the 20 we will be offering at any given time, they need help from a server who really knows beer flavors, styles, and service. In the wine world, the word "sommelier" designates those with proven expertise in selecting, acquiring and serving fine wine. At one time, some beer servers adopted the title "beer sommelier" to tie into the credibility of the wine world. But in the years since its founding, the Cicerone Certification Program has become the industry standard for identifying those with significant knowledge and professional skills in beer sales and service.
The Cicerone Certification Program offers independent assessment and certification on:

• Beer Styles and Culture
• Beer Tasting and Flavors
• Brewing Ingredients and Processes
• Pairing Beer with Food
Mocama servers will register for the Level 1 Cicerone Certified Beer Server exam upon acceptance of their position. Their initial registration will allow them two attempts to pass the timed online 60-question multiple choice exam. We want our servers to be brand ambassadors and beer educators; purveyors of knowledge to our inquisitive patrons about the vastness of beer. They must understand the importance of beer clean glassware, a proper pour, and how we store and serve our beer to guarantee freshness and maximize flavor. By implementing the serving practices tested by the Cicerone program, our servers will be better able to impress and please our customers. The knowledge gained by them will communicate a clear message to our taproom customers, distribution partners, and retailers that we have invested the time, energy, and money to make sure our organization is prepared to do business in today’s sophisticated and rapidly changing beer world. In addition to Cicerone Certification, we will also continually educate our staff through particpation in our proprietary “Beer School”.
The company will pay all expenses, materials, and tuition for certain key employees to attain Level 2 and Level 3 certification.
Mocama will be qualified as a Responsible Vendor under the Florida Responsible Vendor Act. The Alcoholic Beverages and Tobacco Division of the Florida Department of Business and Professional Regulation handles administration of licenses and qualification for all vendors of alcohol. Qualification as a Responsible Vendor is fairly easy and provides many benefits. The most valuable benefit is that as long as we remain qualified, Mocama will be exempt from enforcement action should and deemed not responsible should any employees violate state law while working for Oktopus. The most common violation by servers is the sale of alcohol to minors. Oktopus will have a zero tolerance policy in place for any violation One component of qualification is the requirement that all managers and servers take a short online course and pass an online exam offered by Learn2Serve.
Responsible vendor training provides our employees with the necessary knowledge and techniques needed to be a responsible seller of alcohol. Specifically, they learn how to protect themselves and our brewery from liability; how alcohol affects our customers; how to recognize the effects of alcohol on yur customers; how to prevent customers from becoming intoxicated; how to intervene when they need to refuse a sale to someone; how to prevent and deal with disturbances; how to accurately check IDs and recognize minors; how to prevent second-party sales; and how to refuse a sale. The effects of the training include fewer underage sales of alcohol, fewer DUI fatalities, and more successful compliance with state statutes on the part of servers who are more professional and knowledgeable. Oktopus will receive a reduction in our liability insurance premiums for successful completion of the training and ongoing compliance with the Act.
